Healthy pizza

It´s Tuesday, or maybe Wednesday. You´re cravin´some pizza, but the weekend is just so so far away… And you really truly honest to God are trying to lead a healthier life (at least for a few weeks between summer and Christmas). Indian chicken soup

After a summer shorter than the lifespan of a fruitfly with bad genes, we (the lucky people of south-west Norway) are thrown head first into the rainy days of fall. I swear, the rain – it is nevereverending. We better get cheap electricity this winter!!

I have one advice: with very little effort (or culinary experience) you can cook a big pot of this Indian chicken soup that warms you up, from the inside out. The soup has just the right amount of heat to it (for us westerners), and it´s the type of soup that everyone will like. Noah (my 2-year old) ate it too! And you´ll have dinner for a couple of days. What´s better than leftovers when you don´t feel like cookin´?

Forgive me reader, for I have sinned, it has been 22 days since my last blogfession. You see, we have been on a internet free vacation and otherwise just sporting a busy summer. Yeah, excuses, excuses…

Chicken noodle soup

I woke up at 2 am one of these nights, and no, not to the sound of my baby crying. I woke up to the sound of autumn… POURING down ouside! It still rained dogs and cats when I got up in the morning, and still when I looked out the windows at work, and still when we drove home from work… And it was a meager 12 degrees Celsius (53 F) outside. So unfair! It is barely September! *POUT* One thing to do, and one thing only: Eat chicken noodle soup! Only we have to make it first. And maybe curl up on the sofa with a good book and a blanket… Ok, here we go.

Quick chicken in mango chutney sauce

First, get out your martini shaker. Pour the 5 ingredients into the shaker. Shake the shaker. Pour over chicken. Bake in oven. Done. Seriously! Is this the perfect Friday night meal for tired parents, or what? Serve with rice and cold beer and you´ll be happy chillin´ in front of the TV in no time!

Soulfood and then some…

Finally (?) home and back to a somewhat normal state after a fabulous vacation in Florida, a stunning wedding in Leipzig and visits from great friends. I have gotten so used to having at least 7 persons around me at all times that I have some serious social withdrawal symptoms! Chicken tortilla soup

I think I´ve died and gone to soup-heaven. Oh my my my…

I once taste chicken tortilla soup at one of my friends house in the US, her mom had made it. That´s an experience I never forgot! I have been reading different soup recipes ever since, and tried to make chicken tortilla soup a few times. This is by far the best attempt, I also like that this is based on condensed store-bought stock, so it doesn´t call for hours and hours of cooking. It is easy, I swear!

I am begging you — please make this soup!
