Monday night romance: chicken and vegetable au gratin with wholegrain pasta

Mondays are rough. That´s a fact. Well, let´s cook a nice meal, light some candles and romance it up! (Today, romance is a verb. Since it is Monday and all).



  • Chicken fillets (cubed)
  • Vegetables (e.g. bell peppers, zucchini/squash, onions, spring onions, mushrooms…)
  • Wholegrain pasta
  • Pasta sauce
  • Cheese (fresh buffalo mozzarella and parmesan does the dish justice)


  • Kyllingfileter (i biter)
  • Grønnsaker (f.eks. paprika, squash, løk, vårløk, sopp…)
  • Fullkornpasta
  • Pastasaus
  • Ost (gjerne fersk bøffel mozzarella og litt parmesan)

Start by boiling some lightly salted water for your pasta, and turn on your oven (200 degrees Celsius / 400 degrees Fahrenheit).

Slice some vegetables; for example red bell pepper, zucchini / squash, mushrooms and spring onions (whatever you have, really), and layer them in an oven-proof dish. Drizzle with olive oil and season with a little salt and pepper, and plop it in the oven.

Cube a couple of chicken fillets and sear in a hot pan in some oil.

Once the chicken is done, take the dish of vegetables out of the oven and put the chicken over the vegetables. Pour a jar of pasta sauce over all of it and sprinkle over some cheese. I used parmesan and fresh mozzarella. Now, back in the oven until the cheese is melted and the pasta is done.

Now, light some candles, kiss your husband (or wife) and dig in!
