Chicken tortilla soup

I think I´ve died and gone to soup-heaven. Oh my my my…

I once taste chicken tortilla soup at one of my friends house in the US, her mom had made it. That´s an experience I never forgot! I have been reading different soup recipes ever since, and tried to make chicken tortilla soup a few times. This is by far the best attempt, I also like that this is based on condensed store-bought stock, so it doesn´t call for hours and hours of cooking. It is easy, I swear!

I am begging you — please make this soup!
  • 3-4 TS vegetable oil
  • 1 onion
  • 3 cloves garlic
  • 3 spring onions
  • 5 ts chili powder
  • 1 ts dried thyme
  • 1 can crushed tomatoes
  • 1 1/2 qt water
  • Condensed chicken broth or buillon (enough for 1 1/2 qt water)
  • 1 can of corn
  • 1 jar of jalapenos
  • 1 jar of salsa (hot)
  • 1 can black beans, drained
  • 1 whole grilled chicken
  • 1-2 bell peppers (red/green/yellow)
  • 1 cup fresh cilantro
  • 1 cup of creme fraiche (or sour creme)
  • 1/2 lb cheddar cheese
  • Juice from 1-2 limes

Serve with:

  • Crushed tortilla chips
  • Sliced or cubed avocado
  • Corn tortillas
  • Shredded cheese
  • Sour cream


  • 3-4 ss olje
  • 1 løk
  • 3 fedd hvitløk
  • 3 vårløk
  • 5 ts chili pulver
  • 1 ts tørket timian
  • 1 boks tomater
  • 1 1/2 l vann
  • Konsentrert kylling kraft/fond eller buljong (nok til 1 1/2 l vann)
  • 1 boks mais
  • 1 glass jalapenos
  • 1 glass salsa (hot)
  • 1 boks svarte bønner
  • 1 helgrillet kylling
  • 1-2 paprika (rød/grønn/gul)
  • 1 kopp fersk koriander
  • 1 beger creme fraiche (eller rømme/kesam/fløte e.l)
  • 250 g cheddar ost
  • Juice fra 1-2 limes

Server med:

  • Knust tortilla chips
  • Avocado i sneier/biter
  • Mais tortillas
  • Gjerne litt riflet ost
  • Rømme

Start by chopping the onions (garlic, onion and spring onions). Heat the oil in a skillet and toss all the onions in. Let them sizzle a bit before adding chili powder and thyme. Let this sizzle a little bit (a minute or so). The hot oil makes the spices release their flavor. Add the can of tomatoes. Now add the water and stock/buillon, the corn (including the juice), the jalapenos (without the juice), the salsa and the beans. While this simmers over low heat, remove the skin from the ckicken and cut (or use your hands – that´s what I do) all the meat off the chicken. I tear the meat so that it is a little stringy. Toss it all into the simmering soup. Cut the bell peppers in strips and add them to the soup.

Now let this simmer while you set the table and prepare the rest of the ingredients (shred the cheese if it´s not already shredded, cut the avocado, put some tortilla chips on the table, heat the corn tortillas just a little…). The bell peppers should now be tender. Turn down the heat and add the cheese, cilantro, creme fraiche/sour creme and squeeze the limes into the soup. Remove from heat.

Recommend your guests to crush some chips onto their soups, to add a little avocado, a little shredded cheese and a small dollop of sour creme and with a tortilla on the side – YUM! Oh, and it is not wrong to serve this with an ice cold corona with a wedge of lime in it…

I must confess… if no one was watching, I would lick the bowl!

  1. Kjempefin blogg, Karen, og denne suppa var bare helt fantastisk. Lagde den på lørdag. Jeg måtte holde igjen litt på chilipowderet av hensyn til unge ganer, dessuten glemte jeg osten, men det gjorde ingen ting.


    Fant forresten ut at den blir nesten enda bedre etter å ha blitt avkjølt og varmet opp igjen. Greit med alt som kan lages på forhånd 🙂

  2. So its super cold, dark and rainy outside and I just made this soup – it totaly lives up to my expectations – YUM!! All the flavors I love mixed in a warm, soothing soup 🙂 I made mine slightly less spicy, but it still packs a punch.
