Zesty tomato soup

Tomato soup can be so dull, lifeless and boring… but not this tomato soup. This tomato soup has gumption. It toys with your tastebuds. It leaves you wanting for more. Believe me; make it, and you will make it again.

It is not often I take recipes as they are, I normally tweak them a bit. But this one I didn´t change; this is Andreas Myhrvold´s recipe and I find it to be just right as it is.

Pretty tomatoes

The soup:

  • 2 cans of tomatoes (whole or chopped)
  • 4 plum tomatoes
  • 1 red chili
  • 1/4 onion
  • 1-2 garlic cloves
  • 2 TS olive oil
  • 1 cube chicken bouillon
  • 2 TS creme fraiche
  • 1 TS butter

The toppings:

  • macaroni
  • hard boiled eggs
  • croutons
  • basil (or parsley)
  • pumpkin seeds
  • olive oil



  • 2 bokser tomater
  • 4 plommetomater
  • 1 rød chili
  • 1/4 løk
  • 1-2 fedd hvitløk
  • 2 ss olivenolje
  • 1 terning kyllingbuljong
  • 2 ss creme fraiche
  • 1 ss smør


  • makaroni
  • hardkokt egg
  • krutonger
  • basilikum (eller bladpersille)
  • ristede gresskarkjerner
  • olivenolje

Start by chopping the chili, onion and garlic.

Heat the olive oil in a skillet and toss it in. Add a little salt and pepper and let it sizzle for a couple of minutes until the onion is shiny and has softened a bit. Roughly chop the tomatoes and add both the fresh and the canned tomatoes to the skillet.

Dissolve the bouillon in water. Add a little to the skillet (my suggestion is to start with a cup and take it from there..). The bouillon adds complexity to the soup, and you should taste to find out how much you want in your soup. Let this simmer until it is all tender, about 20 minutes or so. Now you have two choices. You could pour all of this into a blender and run until the soup is smooth. Or you could use an immersion blender directly in the pot. Both work, I prefer the immersion blender. Less dishes 🙂

After the soup is nice and smooth, add butter, creme fraiche, salt and pepper to taste.

Zesty tomato soup

Jazz the soup up with whatever you want. I added macaroni, hard boiled eggs, croutons and parsley. A little drizzle of olive oil on top never hurts… Serve it to good friends in the early evening when it is dark and snowy outside, with some good bread to go with it.
