Tempura ice cream

Fond of ice cream? How about re-inventing this classic dessert?

Let´s toss it in the deep-frier, Japanese style! Are you in?

This is not a very difficult dish to make, but it could be a little messy. But trust me, it will be so worth it. Start by laying a couple of slices of pound cake on a square of plastic wrap. You could either bake the pound cake, or buy one. 🙂

Spread two scoops of ice cream along the middle of the slices. I used vanilla, but feel free to use your favorite kind. Use the plastic wrap to make this into a roll, with the pound cake surrounding the ice cream.

Roll it up nice and tight and place it in the freezer until it is frozen, about 1-2 hours. You could always make a couple of extras too, to save for later. Before you take it out of the freezer, you need to prepare the following:

A plate (big enough for the ice cream rolls) with about a cup of flour, and a bowl (also big enough to dip the rolls in) with tempura batter.

Tempura batter:

  • 1 egg, beaten
  • 4 dl flour
  • 2 dl water

Mix until you have a smooth batter. Heat vegetable oil in a deep frier of a pot, enough so that it will cover the rolls. Also, before you start, it might be smart to lay some paper towels on a plate for the fried rolls.

Your guests should be about seated (or peeking over your shoulder) now, as the ice cream should be served as soon as it comes out of the frier.

Now first coat the roll with flour, then dip it in the batter. This is definitely the messy part. My hands were so full of gooey, pasty batter, that snapping a picture of this madness was out of the question… If you want to see all the steps, you could check out this video.

Drop it into the (very) hot oil and let it fry for 20-30 seconds, before “fishing” it out. Lay it on the paper towel covered plate. Your dessert should now have a nice, warm, slightly crispy surface and a frozen middle.

To serve, slice it like a sushi roll and top it with your favorite toppings. I melted a little dark chocolate, with a dash of heavy cream in it.

Even though this looks like a big serving, I swear to you you will be able to finish it. I seriously didn´t think I would be able to, but that baby was gone in a flash!
