I ♥ aioli

I don´t know if you believe me, but it is summer in Stavanger, Norway (let´s not even start discussing that, ok?). And in the summer we throw grill parties and BBQs and go on picnics and boat trips and mountain hikes and late night terrace tapas parties. Let me present to you the perfect companion to all these events: smooth, garlicy, slightly salty, can´t-get-enough-of-it AIOLI! (or garlic mayonnaise if you wish)

Even though aioli is created by emulsification (a molecular gastronomical phenomenom) it is surprisingly easy to make. It just sounds fancy – don´t be intimidated! I made this out on the terrace. See? It is summer!

Sumptuous ceviche

Ok. My absolute favorite this summer is the Latin American dish ceviche. Hands down. I suspect many different interpretations of ceviche will swim out of my kitchen this summer!

This one is quite basic, however a bit untraditional as I´ve used salmon rather than a white saltwater fish. The elegance of the “raw” fish, the tang of lime, the crispness of koriander and the slow, warm heat of the chili is perfect as a lunch snack in the shade – accompanied by ice-cold beer and some salty tortilla chips!

Rhubarb soup with fresh strawberries and mascarpone cream

Rhubarb (like the Scandinavian women) is standing tall, tempting and bountiful in many a Scandinavian garden right now. In not too long, the rhubarb will be too acidic to eat, so let´s use it now while we can, shall we? You could always just peel off the strings and dip the rhubarb in a cup of sugar and chow away at it (brings back childhood memories, doesn´t it?), but let´s be a bit more creative. How about posh-ing up  (not to be confused with poaching) a traditional Norwegian early summer dessert; the rhubarb soup? Key words: black fragrant vanilla, sweet red strawberries, smooth white mascarpone… Not possible to go wrong here…!
