Brownies with caramelized walnuts and walnut caramel

Since it is Easter and all I´ll just go ahead and start off by making some dessert… Might as well, don´t you think? A little while back I shared with you the recipe for Swedish brownie cake. These brownies are made using that recipe, but with a sweet and crunchy little twist.

Start by caramelizing the walnuts. Combine a couple of handfuls of walnuts with about a cup of sugar in a hot pan.

Keep the heat up and keep stirring until the sugar melts. The melted sugar quite easily coats the walnuts. Now, without burning yourself, spoon the whole blob of caramelized walnuts onto a baking sheet.

 Try to separate them. Now, add some more sugar in the same pan – if there are still some traces of the walnuts in the pan, don´t despair! This is the good stuff! Melt the sugar and drizzle it on another baking sheet.

While this cools, lets throw the other ingredients together. The ingredients are the same as last time:


  • 125 g melted butter
  • 2 eggs
  • 1.5 dl flour (gluten free if you´d like – you won´t even taste the difference!)
  • 3 dl sugar
  • 3 TS cocoa powder
  • 1 ts vanilla sugar
175 degrees Celsius / 350 degrees Fahrenheit for 20-30 minutes.


  • 125 g smeltet smør
  • 2 egg
  • 1.5 dl mel (med fordel glutenfritt!)
  • 3 dl sukker
  • 3 ss kakao
  • 1 ts vaniljesukker
175 grader i 20-30 minutter.

Before adding the caramelized walnuts, let´s prebake the brownies for about 5 minutes at 175 degrees Celsius / 350 degrees Fahrenheit. The reason why I choose to do this is so that the walnuts won´t sink to the bottom of the cake.

In the meantime give the walnuts a rough chop.

Take the cake out of the oven and pile the walnuts on top of it.

Decorate with some walnut caramel and enjoy!

Looks a little like a Easter bunny, no?
