Easy-peasy vanilla cake

I didn´t really make this for the blog – I just wanted cake 😀

But, seriously, this cake is so easy and quick to make, and it is so good! Moist and flavorful! And lots of potential if you want to be creative with it.

  • 1.5-1.7 lb flour
  • 1.2 lb sugar (does this make it a pound-cake??)
  • 2 ts vanilla sugar (use a little vanilla extract if you don´t have the sugar)
  • 6 ts baking powder
  • 1 qt vanilla sauce
  • 1/2 lb melted butter

Cinnamon and demerara or other big grain sugar.


  • 700-800 gr mel
  • 550 gr sukker
  • 2 ts vaniljesukker
  • 6 ts bakepulver
  • 1 l vaniljesaus (stor ferdigpakke)
  • 250 gr smelta smør

Kanel og perlesukker drysses over.

Mix all the dry, then add the vanilla sauce then the butter (I added the butter first this time I made this, I was in a rush – with a lumpy result :S). In Scandinavia we have already made vanilla sauce in a carton that is meant for this recipe, but I don´t know if you can buy this other places. Here is a link to a recipe that might work: vanilla sauce. Just make sure it is quite thick, kind of like white gravy. Or in a pinch, substitute with buttermilk, baking soda and lots of vanilla extract… I am sure that would be good as well.

Pour on a baking sheet in a big, rectangular pan. Sprinkle with cinnamon and sugar. Bake in the oven at 180 degrees Celsius/355 degrees Fahrenheit for about 30-40 minutes.


  • Add apples
  • Add white chocolate chips and macadamia nuts
